These are different builds I have used in the past on my mage.
AOE Grind Build

Key Features:
->Arcane:
*Reduction of Resistance to all spells by 10 and an additional 10% for Arcane.
*Chance on spell hit for ClearCasting
*Slight Armor Increase
*15% More mana from Intellect
*30% Mana regen while casting
*6% Crit Chance with Arcane Explosion
*13% More Damage from wands
->Frost:
*30% Increase to armor from Frost based Armor spells
*18% Reduction in cost for Frost spells
*Increased Chill Effect
*Blizzard Has Chill Effect
*20% Increase in Frost Range
*11% Frost Damage Increase (40% to Cone of Cold)
*Reduced Chance for Melee and Ranged hits to land
*60% Chance for Winter's Chill
*Cold Snap
*Ice Barrier

Fire Burst Damage Leveling Build
This got me to 70

Key Features:
->Arcane:
*Reduce target's resistance to all spells by 10 and an additional 6% for Arcane
*Chance on spell hit for ClearCasting
->Fire:
*Fireball cast time reduced by .5
*Fire Blast cooldown time reduced by 1.5
*Increased range of 6 yd for Fire Spells
*Critical Hits burn the target for 40% over 4 sec (This will keep stacking with each additional crit and reset the timer)
*30% Refund on all Fire / Frost spell Criticals
*9% Increase chance of fire spells (13% to Fire Blast and Scorch)
*12% Increase to fire spell damage (32% if target is below 20% health)
*3% Reduction to fire spell cost
*Fireball gains an additional 15% from bonus spell damage
*10% Chance on being hit to move 50% faster and remove all movement impairing effects for 8sec.
*2 New AOE fire based spells
*70% Not to loose casting time on fire spells when hit
*Combustion - Until you get 3 critical strikes each cast of a fire spell will increase critical strike chance by 10%
Notes:
With this Build you want to try and have Combustion up all of the time as well as use your Molten Armor. I also have only used Pyroblast in very rare circumstances, it's cast time is way too long and my normal fireball does close to the same amount of damage on average.
This build is also built around Fire Blast

I'm not going to go into as much detail over this one. I will note that I notice high amounts of critical's against other players. This was a cookie-cutter build I found on WoWwiki.com and it does a decent job. [Only registered and activated users can see links. ]
I really only use it to jump into large groups of enemy players, hit Arcane Power, and spam Arcane Explosion over and over again. I tend to do roughly 14k-23k damage over 30 seconds depending on the size of the enemy group.
I will probably try to build my own spec based loosely off this build. Possibly with more emphasis on AOE frost spells. It might also help to get some actual PVP gear instead of the craptacular gear I'm currently wearing >.<

I Bind this to CTRL+E and party members find it useful since it will emote that the primary source of DPS, and sometimes Tank, is currently eating and drinking.
