Same problem on this like most others. Ive only downloaded 1 Tauren -> "anything" model edit that have worked with my skincolor on my cow.
I have a night elf female model but I still got the skincolor from my tauren and the hair on the elf is also skincolored.

lol the problem is some off the models got bugged faces
thath is fixable but takes time

i know how too fix it but i am too lazy atm
you see tauren have much more textures than nightelfs you just need too take lets say nelf skin 1 and rename tooone off the tauren skins or something like thath

nice! just so peeps know you will have the same skin as the race you were before and you can check a guide on how to fix the helm issue

I want to say to Rujiji that I can resolve the skin problem, but you have to know that is really hard to change Tauren to something else perfectly. I did Perfect Tauren Male to Human Male, I've never resolved the bear problem because it doesn't work in the same way. but if you want I can do a Perfect Tauren Male to Night Elf Male but it can take 2 or 3 hours (Basically not because I needed this time the first time, but now I know how to do it) !
I can resolve the boots & helmets problem too.
