No. They all use 1 model, and you are changing this model to an undead. Therefore, all of them will be undead.

i have done it. but not for live. you have to alter the dbc files. i think that doesnt work on live. all you have to do is duplicate the entries for the race you want to change. make one for the player and one for the game npc's. takes time to do but it is possible.

You can change all PC UD to female Humans of a specific skin/configuration for example and leave UD npcs still UD, it looks akward at times though due to the server sending Geoset display info for PC's. (With one texture used only doesn't look right often)
