What you Need

The ability to extract NPC ID's from Wowhead or Thottbot
It works on Ascent but unsure with Mangos, again, plz post if you get it working
[Only registered and activated users can see links. ], not required but better if you want to make a new mount completely (not needed in say replacing a Mistsaber's LOOK with a Dawnsaber)

For this, I'm going to replace the Mistsaber with a Dawnsaber, and for the sake of the last requirement, change its item name for more effect...

1. Open up DBCEditor and open Spell.dbc in [Ascent Directory]\DBC\ or convert it to a CSV and open that up.
2. Go onto Wowhead/Thottbot and find the SpellID of the mount that you want to change, Swift Mistsaber is 23219
3. Go back into DBCEditor and use the find function at the top to find the SpellID
4. Go along to colum 110 and there should be a number, select it and minimize DBCEditor
5. Go back onto Wowhead/Thottbot and search for the mount you want to replace and select the NPC this time, get it's ID and go back to DBCEditor and check to make sure the ID's the same
6. Go back to Wowhead/Thottbot and get the ID of the NPC you want to mount on.
7. Replace the old ID in colum 110 with the new ID
8. Go to colum 124 and change the name of the spell, now save it
9. You can now start up ascent (or restart) and use the Mistsaber mount and it'll mount onto the selected NPC instead!
10. Now that you've changed the model it mounts on, you need to change the item (if you want, you can skip this but the mount will still be named the exact same as it used to)
11. Open up Ascent DBEditor and log in (if you have trouble here, try searching the forum coz I can't help sorry

)
12. Go onto the Items tab and search for the old mount
13. Simply change the name to whatever you want (so I'l pick Reins of the Swift Dawnsaber)
14. Go in-game (you don't need to restart ascent) and type ".reloadtable items" or ".server reloadtable items" and remove the mount if you already have it then just re-add it and it should be renamed!

Pro's
You can change this to any NPC model in the game!
Anyone can see it (if not post :S but it's worked for me before)
You don't have to use .mount anymore

Con's
You may not be able to reload your tables if it's got certain configs
This may only work on ascent, if it works on mangos then great

You have to replace current mount spells

Swift Mistsaber (NPC ID: 14555) » Swift Dawnsaber (NPC ID: 14557)
Swift Blue Gryphon (NPC ID: 20509) » Spectral Grypon (NPC ID: 16081) has a little model bug, it flaps its wings to fast
